I just made the most delicious supper I felt I needed to share it with the world! It was very easy, straightforward and healthy.  I popped into Kay’s Local yesterday as we accidentally forgot H’s packed lunch at home. They had the vacuum sealed cooked beetroot on special offer, and I do rather love beetroot. As soon as I bought it I was beginning to imagine this meal.

It is the most fabulous combination of flavour and texture.

Serves 2, 311kcal each

Ingredients:

500g cooked beetroot (you obviously could cook from raw yourself, or do as I did)

One orange

One avocado

70g feta

Garlic powder

Salt

Pepper

Paprika

Spray oil (I used olive but I’m sure any would be fine)

Method

Wearing gloves, carefully open the beetroot and pour out the liquid. 

Still wearing gloves, cut the beetroot into wedges and fry in the spray oil, salt, pepper, garlic powder and paprika. You could also bake in the oven. When looking a little crunchy in the edges it is done.

Slice the orange and avocado.

Arrange everything on a plate, pour the orange juice that’s come out of the orange over everything. 

That’s it, you’re done.
