This is a basic 6/6/6 recipe adapted. I used the number of bananas I had and only had half the amount of margarine in the fridge necessary so substituted with oil. I’m sure you could do it all oil or all margarine and it with also work. We all thought they were delicious including children. It is a good recipe to make with them, they enjoy mashing the bananas and you can use the opportunity to try and teach them how to crack eggs.
Makes 12 cupcakes, 208kcal each
Ingredients
4 smallish over ripe bananas
75g margarine
3oz oil
6oz wholemeal self raising flour
17g canderel
2 tsp baking powder
2 eggs
Method
- In a large mixing bowl mash the bananas with a fork.
- Add everything else and mix it all up.
- Decant into 12 cupcake cases so they are about 3/4 full (or the whole thing into a bigger tin).
- Cook at 180°C until they are cooked through, (brown on the tops and spring back when you press gently with your finger). You know your own oven.
- Enjoy!
